Nomday American Chop Suey and Happy New Year!

I hope everyone had a wonderful start to the New Year! I am so excited by all of the possibilities for 2012!


American Chop Suey

Approximate Cost: $16.00

Preparation Time: 15 Minutes

Cook Time: 5 – 8 Hours

1 to 1 1/2 pound ground chuck (lean ground beef)

1 medium onion chopped

2 medium green peppers, chopped

1/2 teaspoon garlic powder

1/2 teaspoon paprika (optional)

salt and pepper to taste

1 cup shredded process cheese

1 can (6oz) tomato paste

1 can (15oz) diced tomatoes, undrained

2 cups cooked macaroni

I think I may have goofed on the first attempt at this one, but made it up with the second try. I cook for two households, blessedly neither one home to picky eaters.

In the first one I tossed the pasta, uncooked, into the bottom of the crock pot. We shall see how this turns out. The pot for Max has to sit much longer because he leaves it on low while he is at work (8 to 10 hours). Because of this I never cook the meats, I always toss them in raw to make sure nothing gets too dried out.

The second try does not have any noodles in the pot; I will toss cooked macaroni in once all other ingredients are cooked. I did not cook the meat for this version either because it will have plenty of time to cook since we still have New Year’s Eve and New Year’s Day leftovers.
